5 Breakfasts Under 5 Minutes: 21 Day Fix Approved

I hear a lot of people say that they don't eat breakfast because they don't have the time in the morning!  It is so important to eat within an hour of waking up to make sure your body is properly fueled.  Here are some super easy breakfast ideas that you can make in under 5 minutes!

1. Banana Berry Yogurt

  • 3/4 cup plain Greek yogurt
  • 1/2 cup blueberries
  • 1/4 banana
Mash or slice banana.  Mix all ingredients together.
21 Day Fix Container Count = 1 Red1 Purple

2. Egg Nest

  • 1 piece of whole grain toast
  • 1 egg
Punch hole in bread (eat the part you punched out), spray pan with non-stick cooking spray, put bread in pan and crack egg in the middle.  Once the first side is cooked, flip and let egg finish cooking to your desired liking.
21 Day Fix Container Count = 1/2 Red1 Yellow

3. PB&J Waffle

  • 1 whole grain waffle
  • 1 tsp. all natural peanut butter
  • 1/2 cup sliced strawberries
Spread peanut butter over toasted waffle, top with strawberries.
21 Day Fix Container Count = 1 Yellow1/2 Purple, 1 tsp.

4. Southwest Scramble

  • 2 eggs
  • 1 tsp. olive oil
  • 1 cup chopped veggies (I usually prep a bunch of random veggies on the weekend and use them throughout the week.  My favorites are green peppers, onions, and mushrooms.  Pictured is spinach.)
  • 1/4 cup shredded cheddar cheese
  • 1 tsp. Southwest Seasoning
Sautee veggies in olive oil.  Whisk eggs while veggies are cooking.  Add eggs and seasoning to veggies.  Once cooked through add cheese and stir until cheese is melted.
21 Day Fix Container Count = 1 Red, 1 Green, 1 Blue, 1 tsp.

5. Hawaiian Breakfast

  • 1/2 cup cooked brown rice (prepped ahead of time)
  • 2 eggs
  • 2 turkey sausage links
Heat pan and spray with non-stick spray.  Cook eggs over easy (I like to put a lid over the frying pan and steam the eggs, that way I don't have to flip them and risk breaking a yolk.) While eggs are cooking heat rice and sausage in microwave.  Top rice with eggs.  Tastes great with some hot sauce if you are into that.
21 Day Fix Container Count = 2 Red1 Yellow

PB&J Banana Omelet: 21 Day Fix Approved

This is my take on the "2 Ingredient Pancakes" that have been floating around Pinterest for some time now.  I had an idea to make this because 1. I am lazy and  hate cleaning the blender and 2.  I am a sucker for sweet breakfasts.  I'm not kidding...when I was pregnant there was a solid 3 month period when I ate pancakes every single day.

Pregnant me =

The conclusion:  This omelet is soooo yummy, quick, easy, and kid friendly.

Ingredients
  • 3/4 cup blueberries (allow for the extra ones that accidentally fall into your mouth before and during cooking.)
  • 2 eggs
  • Splash of vanilla
  • 1 tsp. cinnamon
  •  ½ banana, sliced
  • 2 tsp. all natural peanut butter

Instructions
  1. Over low heat, put blueberries in pan with a splash of water and warm through until they start to break up. If you are really strapped for time, this step can be done in the microwave:  it should take less than a minute before the berries start to soften.
  2. Move berries to a bowl and set aside.  Give the pan a quick wipe down.
  3. Whisk together eggs, vanilla, and cinnamon.
  4. Turn stove up to medium heat.  Once the pan is hot spray with non-stick cooking spray and pour in the egg mixture.
  5. Place the sliced bananas in the egg mixture like so:
  6. Cook the mixture until eggs have solidified.  I gently raise the edges while cooking and tip the pan so that the eggs run underneath and cook.  This stops the bottom from overcooking and makes for a more even omelet.
  7. Once eggs are cooked, spread peanut butter on half and top with 3/4 of the berries.
  8. Gently fold omelet.  This can be done with a spatula or while you are sliding it out of the pan onto a plate.
  9. Top with remaining berries.
Tips:

  • This omelet is so tasty and would also taste great with strawberries, raspberries, double bananas, or if you want to get really crazy, you could mix the fruit with plain Greek yogurt or cottage cheese.  The possibilities are endless!
  • Make sure to remove baby's brand new clothes before feeding it to her.

Makes 1 omelet.
21 Day Fix Container Count = 1 red2 purple, 2 tsp.

White Chicken Enchiladas: 21 Day Fix Approved

One of my favorites!  I love to make a batch on the weekend and have them for lunch all week long.  This is one of those "I can't believe this is a 21 Day Fix recipe" recipes.

Ingredients
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp. minced garlic
  •  ½ medium onion diced
  • 1 yellow pepper diced
  • 4 cups torn fresh spinach (about ½ bag)
  • 2 cups shredded chicken (about 2 medium chicken breasts)
  • 1 4-ounce can diced Green Chiles (undrained)
  • 1½ cup Greek yogurt
  • 2 tablespoons Southwest Seasoning
  • 1 tsp. lime juice
  • ½ cup water
  • 6 7-inch whole wheat flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 medium tomato chopped

Instructions
  1. Preheat oven to 350 degrees.
  2. In a skillet, heat olive oil and sautee garlic, onions, and pepper over medium heat.
  3. Add torn spinach leaves to sauteed mixtures and wilt (about 3-4 minutes)
  4. Remove from heat, stir in chicken and diced Green Chiles
  5. Meanwhile, prepare sauce of yogurt, Southwest Seasoning, lime juice,  and water.
  6. Pour half of the sauce into the filling mix.
  7. Fill six whole wheat tortillas (I used gluten free tortillas) with filling mix and roll, placing seam side down in a baking pan.
  8. Top with remaining sauce and sprinkle with cheese.
  9. Bake for 15-20 minutes until cheese is melted and browned.
  10. Top with tomatoes.
Makes 6 enchiladas.
21 Day Fix Container Count (1 enchilada) = 1 green1 red, 1 yellow,  1 blue, 1 tsp.

When you are cutting onions, make sure to wear your onion cutting goggles!  Best Mother's Day present every!

Southwest Seasoning

This is seriously my favorite seasoning.  I usually quadruple the recipe because I put it on everything!  It goes great on eggs, chicken, or even your broccoli to give it a little Southwest flare.

Ingredients
  • 1 tbsp Chili Powder
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp paprika
  • 1 tsp sea salt

Instructions
  1. Mix together with a fork.
  2. Store in air tight container (an old spice jar works great!)

My Weight Loss Journey

Weight is something that I have struggled with my entire life.  When I was a child I was always the tallest girl in my class and hit puberty before everyone else my age, and even though I wasn't overweight as a child, I was big compared to all of my friends.  I was very active during my childhood and took dance classes 6-7 days a week until middle school when it just became too much so I decided to quit.  The less active I became, the more weight I put on.

By the time I was in high school I was very insecure with my body.  I always found myself making excuses about why I couldn't go to the lake or in the hot tub at a friend's house just because I couldn't bear the thought of wearing a swim suit.  I missed out on a lot of things because I was embarrassed about how I looked and I didn't know how to fix it.

When I got to college I started to put on more weight.  I would try to cover it up by wearing clothes that made me look thinner than I was.  Shopping was miserable and I would often times cry in the dressing room when I couldn't get the biggest size of pants on.  I would make excuses and say that that store's sizes just run small.

It wasn't until after college when I was looking at our family Christmas photos that I realized how out of control my health had gotten.  I started to reflect on my life and realize how miserable I was, how unhappy I had become, how I untagged myself from nearly every picture on Facebook because I looked so big, how my size 14 jeans were getting really tight and I  the next size up was a plus size.  I was depressed and ashamed of my body and the habits that lead me there.  I never weighed myself for fear of what the scale would say.

It was January 2012 when I had enough and decided to get serious about making a serious change.  First, I bought a scale:  at my heaviest, I weighed 186 pounds.  I started eating clean and meal planning.  I bought some workout DVDs and started working out at home.  After a month I had lost almost 15 pounds and was motivated to keep going.  I graduated from my Hip Hop Abs and decided to try Jillian Michaels 30 Day Shred.  By March I had lost a total of 25 pounds and decided to step my workout up and do the at home workout program that everyone says is just crazy: Insanity.  The workouts were tough and I had to modify a lot of the moves, but I started to see a huge transformation in my body and even the faint hint of my muscles.  I became obsessed with getting fit. My step mom even talked me into running a half marathon with her in the summer.  I never liked to run, but I wanted to challenge myself.  When I started running I was shocked that I could easily run a mile without ever being able to run with such ease before.  I started to believe in myself and believe that I could achieve my goal.

After 6 months I had lost a total of 54 pounds and was now a size 4 (sometimes I could fit into a size 2!).  I was the most confident with my body I had ever been in my life.

The summer after I lost all of that weight, I met my husband and we were married a year later. Shortly after getting married I became pregnant.  I really wanted to have a fit pregnancy, but every time I worked out I would get nauseous and throw up.  The only thing that made my nausea bearable was eating.  It was really hard for me to watch the scale go up, but I knew it was essential for the growth of my daughter, and that I had lost weight before so I could do it again.  After my morning sickness went away (nearly 5 months into my pregnancy)  I had broken all of my good habits.  I didn't eat as healthy as I should have and there were consequences from all of the bad decisions I made.

Right before I delivered in June I was all the way up to 196 pounds!  I thought the weight would come off with breastfeeding like so many moms claim it does, but it didn't work that way for me.  I struggled with my milk supply and had to make sure I ate enough to be able to produce enough milk for my baby to grow.  It wasn't until November that I got really serious about losing the weight.  It has been much harder this time around:  I had to figure out how much to eat to be able to lose weight and still maintain a healthy milk, plan meals for myself and David who has Celiac Disease and cannot eat gluten, and find time to workout between caring for a baby, pumping 8-12 times a day, and maintaining the household.  Now, I am officially down 49 pounds since birth with the help of Focus T25, Insanity, Insanity Max:30, running, and clean eating, and I am determined to lose another 7 before my daughters first birthday.
The picture on the right is after running my first half marathon.  I am doing another one in 3 weeks!
Having lost so much weight twice now, I know that I am never going to let myself get that big again (even when I have another baby).  I still struggle everyday:  I love food.  I love binge eating in front of the TV.  I love sweets and anything with butter.  What I love even more though is being healthy, athletic, and confident in my own skin.  I love being able to set a good example for my daughter.  I love being an inspiration to the people around me.  I love that I can live my life and that nothing can hold me back anymore.

Gretchen 11 Month Update

Not happy about being put in the crib.

Weight:   She hasn't been weighed in a while, but if I had to guess I would say 22-24 pounds.

Height:  Tall!  I'm guessing 30 inches or so.

Clothing Size:  12 months and some 18 months.  That being said, she is growing so fast that I did not want to buy very many 12 month clothes so she is usually rocking some tight 9 month clothes or baggy 18 month clothes.

Eating:  Everything.  She loves food.  Her favorites are blueberries, strawberries, bananas, and watermelon.  She even tries to feed us some of her food.  It is so cute!  I never thought I would be so happy to eat half chewed on chunks of fruit that fell out of her mouth.

Sleeping:  Her sleep has been a little spotty.  Usually she takes 2 naps, but she has been skipping her afternoon nap probably twice a week.  I don't think she is quite ready to drop the second nap yet though because last time she skipped it she went to bed at 7 PM and didn't wake up until 10 the next morning!

Health:  Perfect . Besides a minor cold when she started teething she hasn't been sick at all.

Speech:  Babbling a ton, but she knows who mama and "gaga" (aka dada) are.  She also loves to make a duck noise and copy the funny sounds that we make.  Often times she will make her duck noise and then laugh at herself, it is darling!

Personality:  I love watching her personality develop.  She definitely has a lot of my traits!  She is a go-getter and a problem solver:  she knows when her baby gate isn't locked and always manages to get herself out.  She likes to tease us by pretending to feed us food and then right when she gets her little fingers in our mouth she decide she wants to eat it instead.  She loves to laugh and is definitely a thrill seeker.

Baby Gear Love:  Our new Diono Rainier Convertible Car Seat.

Milestones:  She understands some short directions - like "say hi", "clap your hands", or "give me a kiss" - without us having to show her.  She is also scaling all of the furniture and really good at squatting.  She just started squatting to pick things up and then she will stand back up and place them on the table or throw them over her crib/baby gate.  She also just started placing objects inside of each other; she can stack bowl and likes to put balls and small objects into a muffin tin.

Likes:  Pillow fights, peek-a-boo, dancing (she likes to bounce when there is music on), being swung around by her dad.

Dislikes:  Lately it has been napping.  She also has not been a fan of getting her diaper change and will do whatever she has to to flip over on her belly or sit up.  Luckily we haven't had any accidents.  Any tips to help distract her would be helpful.

Signature Move:  Dave says "farting in her high chair".  Haha.  But I'd have to say her duck quacking noise.

Mom's Proudest Moment:  I am amazed everyday to see how much she has learned in just under a year.  My proudest moment this last month was when I leaned half way to give her a kiss and she leaned in the rest of the way!  Granted half the time she gives me kisses her mouth is wide open, but I don't care.

Dad's Proudest Moment:  Watching her walk around the house using her walker.

Things I Don't Want To Forget:

Her love for eating!  She definitely is her mother's daughter.  I love it when she gets Cheerios stuck to her face.

This girl knows how to entertain herself.  Sometimes she doesn't even know I'm in the same room.

Hanging out with her new friend and neighbor Addy!  They like each other :)

This rare moment where she stayed asleep even after we turned on her light and opened the curtain to wake her up.  She was exhausted - notice the strawberries still on her arm from lunch.

Our first family visit to Snow Goose Produce.  G tried ice cream for the first time.  She immediately spit it out because it was so cold though.

Learning how to brush her (2) teeth.

Her first time eating watermelon!

She loooooves watermelon!

Her hair is is finally getting long!  And sometimes it looks ridiculous after she wakes up.  #bedhead

Her first Cinco de Mayo.  She had fajitas for dinner and absolutely loved them.  The girl loves heat!

The moment I realized the damage she has done to her crib...with only 2 teeth!

That time I decided to climb in and play!

I absolutely love her don't-mess-with-me personality.  She has had it since the day she was born.

Apparently my little tornado thought I was too distracted to realize what she could get into.  Please note that the floor was completely clean when I started folding the laundry.

Tired baby decided she wanted to cuddle.  Daddy came home and took these pictures...I only cried a little when I looked at them because I realized that she is a giant now!  What happened to my teeny tiny baby?

Princess Gretchen loves shopping with mommy!
